Restaurant Manager £35-38k + grats -AA Rosette

We are proudly working alongside one of Britain’s finest stately homes which for centuries has drawn the rich and the famous to stay in the peaceful seclusion of its country state, surrounded by award winning facilities. They are now looking for a Restaurant Manager to be a part of their AA Rosette award winning international fine dining restaurant.

The main restaurant offers superb International cuisine, with fine wines from their extensive cellar. Serving lunch and dinner, there are also four private dining rooms created to reflect the mood of the occasion.

Ideally for this role it should be someone who who can be responsible to meet overall revenue and cost targets to ensure profitable operations. Equally to ensure high standard of service, quality, deficiencies, appearance, and hospitality in staff & organisation.

Main tasks:

* Oversees the scheduling of personnel and the setup of rooms based upon anticipated guest counts and client needs;
* Takes reservations and checks reservation schedules to maximise revenue;
* Greets and seats members and guests;
* Carefully supervises to help assure proper service, i.e. pours wine and takes orders when necessary;
* Inspects dining room employees to ensure they are in proper uniform at all times;
* Conducts the recruitment, training and supervision of all service staff under the guidance of the Personnel Manager;
* Maintain and upkeep the restaurant website, to ensure accuracy and to keep current with market trends;
* Provides appropriate and timely reports concerning employee hours, schedules and pay rates etc.;
* Assists in the production of daily sales analysis and other reports;
* Assures that the restaurant is secure at the end of day;
* Keeps an inventory of dining room items including silverware, coffee pots, water pitchers, salt and pepper holders and sugar bowls;
* Assists in the development and maintenance of the restaurant reservation system;

Candidate profile:

* Previous experience in a similar position, ideally in a Rosette/Michelin establishment;
* Good knowledge of food & wine;
* Experience in the identification and implementation of staff training and development;
* Computer literate (Word, Outlook and Database knowledge);
* Proven leadership and interpersonal skills;
* ‘Hands on Manager’
