* Covers: 1500 per week (Sharing plates around 6000 small dishes a week)
* Shifts: 5 days per week – 7 Shifts (2 double 3 singles – however there is flexibility to accommodate)
* Last order at 11pm (Chefs leave the kitchen 0:00 max)
* Brigade: 12 chefs:
