Overseeing COYA’s flagship venue in Mayfair, and international destinations COYA Monte Carlo, COYA Dubai and COYA Abu Dhabi, Culinary Director, Sanjay Dwivedi, combines traditional elements of Peruvian cuisine with modern seasonal ingredients to create evolving and contemporary menus.
With the collision of South America and East Asia apparent in each of the dishes he creates, Sanjay uses Modern European cooking techniques with Asian influences to create typically Latin dishes. Having closely studied the gastronomic heritage of Peruvian cuisine and the Japanese techniques brought to the country, such as sushi inspiring Peru’s famous ceviche, Sanjay is careful to stay true to the roots of Peruvian cuisine. He is experimental in his cooking and has curated menus full of healthy dishes packed with flavour that impress even the most seasoned gourmand.
Born in London and raised in Delhi, Sanjay’s passion for cuisine started at an early age surrounded by a family of foodies. Throughout his career, he has worked in an eclectic mix of leading restaurants including 10 years at Zaika, the first Indian restaurant to receive a Michelin star, and Oliver Peyton’s Coast Restaurant and Atlantic Bar and Grill. Sanjay has also had the pleasure of cooking for some of the world’s biggest names from Paul McCartney to the Prince of Wales, and a stint as personal chef on tour with The Rolling Stones.
Prior to launching COYA Mayfair in 2012 Sanjay travelled across Peru, sampling unique ingredients and spending time in the kitchens of some of the country’s most acclaimed restaurants and local eateries alike. During this period Sanjay worked alongside celebrated Peruvian chef and ambassador, Gaston Acurio, at his restaurant Astrid and Gaston in La Mar, Lima.
Sanjay continues to make regular trips to Peru, always keeping abreast of the current South American trends, discovering new ingredients and techniques on each visit. Sanjay’s passion for his craft and charming personality has led to a number of broadcast appearances including Channel 4’s Iron Chef UK and BBC1’s MasterChef.
