About the Chef, Joshua Hooper

Joshua Hooper is Head Chef at Bistro Union, Adam Byatt’s quintessential British neighbourhood restaurant, in Clapham.  Joshua, 29, hails from Guildford, and after a string of jobs after graduating from The University of Manchester, he quickly realised his disdain of offices.

At Bistro Union, produce is key and the ethos is to be as British as possible, sourcing from our own soils. As a result, Joshua cooks a lot with Cornish fish and makes an effort where he can to use British produce, where he believes some of the best seafood in the world comes from, especially with access to the Irish waters.

Joshua has chosen to showcase fish in the Meat vs. Fish vs. Veg challenge and his dish will fuse the classic French techniques, British produce and flavours inspired by his favourite cuisine to create a refined version of a British chip shop curry sauce: deep fried crispy cod cheeks with curried mussels, pickled red onion and coriander.

Using waste cuts like the cod cheeks, adds a different texture and is super flavourful. The curry powder and white wine add some personality to the dish and create a synergy between the contemporary and classic.
